Mary Lanning Healthcare provides comprehensive nutrition services to help promote healing and enhance health. Our Food & Nutrition Services features a team of registered clinical dietitians, certified chefs, and a professionally trained staff that meet our patients’ nutritional needs, and provide nourishing food for their families and visitors.
Our Culinary Team
Pat McCoy, RD, LMNT, Director of Hospitality Services, oversees a staff of more than 35 on the Mary Lanning Healthcare campus.

Registered Clinical Dietitians
Rachel Florek, RD, LMNT, CDE
Rachel earned a Bachelor of Science with an emphasis in Nutrition from the University of Nebraska-Lincoln, and completed a three-year coordinated program at Mary Lanning Healthcare, where she gained experience in clinical nutrition, outpatient education, consulting, food service management, and community nutrition. After becoming a registered dietitian, Rachel worked for the Children and Adolescent Clinic and the WIC program, where she provided nutrition therapy, and weight loss consultation, and nutrition assessment and education for a wide variety of ages. She returned to Mary Lanning Healthcare in 2000, offering inpatient nutritional care and outpatient education. She has certification as a Diabetes Educator and in Adult Weight Management, and enjoys using her knowledge to help others live a healthy life.
Crystal Lay, RD, LMNT
Crystal earned a Bachelor of Science with an emphasis in Nutrition from Kearney State College. She completed her internship and graduate program at the University of Nebraska-Lincoln, including rotations at Bryan Hospital, the WIC program, and the health department. She joined Mary Lanning Healthcare after graduation, expanding upon the inpatient clinical nutrition services component within the Nutrition Services Department. She is highly qualified to care for patients who are at nutritional risk or who are already malnourished. She also provides nutritional management and education services to assist patients in improving their health at home. Crystal works closely within multiple disciplines within the hospital setting to provide the best quality of care to Mary Lanning Healthcare patients.
Jana Wells, RD, LMNT
Jana earned a Bachelor of Science in Dietetics from the University of Nebraska-Lincoln, and a Mayo Clinic Dietetic Internship in Rochester, Minnesota, with clinical rotations at Mayo Clinic, St. Mary's Hospital, Rochester Methodist Hospital, Lake City Medical Center, and St. Elizabeth's Medical Center. Jana has special interests in nutrition support, gastrointestinal disorders, and oncology, and participated in research on bariatric surgery patients, and worked in Mayo Clinic's home enteral nutrition program. She also completed a community nutrition rotation at Olmsted County Public Health, and a foodservice rotation within St. Mary's Hospital. She joined Mary Lanning Healthcare as a dietitian, and enjoys working with the staff and patients in the Morrison Cancer Center, Family Care Center, and Mary Lanning Healthcare's Wellness Department.

Our Chef coordinates closely with dietitians and our food production team to individualize each patient’s nutritional needs.
Meeting Patient Needs
Our registered dietitians screen each patient to determine their nutritional needs and provide individualized nutrition support and meal services for patients and their families. We also offer additional consultation services during a patient’s hospital stay as needed.
Mary Lanning Healthcare Food & Nutrition Services maintains strict quality standards that include using the highest quality food, replacing processed food with fresh ingredients and made-from-scratch recipes as often as possible. Our menu typically revolves around comfort foods for healing and well-being.
Patients can select from a wide variety of menu choices, with individualized meal services available upon request to meet special dietary or religious preferences. Snacks are available to fit these needs, as well. Patients with special needs are urged to contact Food & Nutrition Services prior to being admitted.
Kid-friendly foods are also available. And guest trays are available for a cost of $5.00 per meal.
A beverage service can be found on every floor of Mary Lanning Healthcare.
Our Cafeteria is Open to the Public
The Mary Lanning Healthcare Cafeteria is open to the public seven days a week:

Meeting rooms are available for outside groups based on availability.
Nutrition Consultation Services
Nutrition consultation is offered as an outpatient service for a fee. Certain services are covered by Medicare and/or private insurance.
Off-site catering is available for groups up to 500, including galas, business meetings, reunions, graduations, weddings, etc. We can take care of decorations, too.
Garden View Grill
The nostalgic Garden View Grill is conveniently located close to the main entrance of the Mary Lanning Healthcare. You'll love our freshly prepared sandwiches, soups, and salads! And our hamburgers are beefy-licious! View Menu (PDF)
